Fried Egg served on Toasted French Bread

Some things in life are just better with jam! In this case, two fried eggs, diced kale and green onions sauteed in olive oil with smoked Gouda cheese sprinkled over the top. This is my Hail Mary breakfast choice when I'm looking for something quick, easy and fulfilling.Oh and by the way, its pretty light in the calories department also. I used a four fruits jam made from organic raspberries, red grapes, cherries and strawberries. It's really good when served on top of toasted french bread and enjoyed with a cup of your favorite coffee.

Outfit Idea: Matching Colors


Sometimes I find buying new clothing less exciting as finding new outfits in your existing wardrobe. I discovered 3 new outfit ideas just the other day without ever having to leave the house, or even better having to open my wallet. Bow ties help me to color coordinate my outfits better. By pulling the main colors from the tie, I can see matching colors in shirt logos, pocket squares, belts, shoes and socks easier. In this case I found that the navy blue in the bow tie matched this polo's shirt, while perfectly blending the two together with the red shirt logo. The All American Pot Pie


This was probably one of the most delicious Pot Pies I have ever made! This cuisine originated around the Pennsylvania Dutch region. It's the perfect meal for a cold winter day and is sure to keep you feeling all warm inside. I started out with a 1 inch thick, center cut pork chop, seasoned with sea salt and pepper on each side. I wanted to cook the meat a bit before adding it to the rest of the stew, so I seared on both sides for 5 minutes before cutting into cubes. I then added the meat into a pot with 3 cups of diced celery,carrots and green onions combined. By sauteing  the celery, carrots, green onions and pork with extra virgin olive oil, this tenderized the vegetables to just the right texture.
Next, it was time to make the gravy! I used a special brown gravy for this recipe. Here is the link to the blog used to make the Brown Gravy provided courtesy of "The slow roasted Italian". I added the gravy in with the rest of the vegetables before adding the the final and arguably the most important ingredient; the sweet green peas. Add 2 cups of frozen or fresh sweet green peas before seasoning with a little sea salt and pepper. Let the stew simmer on medium heat for about 5 minutes before removing from heat and pouring into individual small oven-safe containers and covering with your favorite crust. Cook for an additional 20 minutes on 350 degrees or until the pie crust is brown on top. Take it out of the oven and let it cool before serving. Hope you enjoy it as much as I did!

Spring Mix Salad with a side of Blackberries

We are now a few weeks into the new year and I have already begun to reap some of the health benefits from eating more fresh fruit and leafy greens. I feel more energized, fresher throughout the day and I'm not as tired after work. Blackberries are one of my favorite berries. They are absolutely delicious and full of nutrients. When enjoying them, It always takes me back to childhood with memories of picking them on the side of dirt roads in rural Alabama. My grandmother would always make a fresh blackberry pie from scratch for me, my brother and friends if we were able to gather up enough of them. I will never forget that smell coming from the kitchen, and the sight of the juices bubbling, piecing the homemade pie crust.

But this meal, I enjoyed a simple bowl of fresh organic blackberries from the market, freshly mixed baby spring lettuce, topped with strawberries, grated smoked Gouda cheese and rotisserie chicken breast sliced and added in. This was the absolute perfect explanation mark for a evening well spent. I found that the flavors of fresh fruit and mix lettuce compliments each other pretty well. Grilled Chicken Sliders: Perfect for any NFL Game Watching Party

Whether you are watching the game at home by yourself or enjoying it with a few of your favorite friends, I couldn't image a better way to satisfy that halftime appetite than with these delicious grilled chicken sliders. Just grill 3 to 4 boneless chicken breast and slice in strips. Serve them up on soft slider buns dressed with pickled jalapenos and your choice of either barbecue sauce or buffalo sauce.

Smoke your Alaskan Salmon in easy 4 Steps

Start you New Year's off on the right foot by taking your diet to the next level. Smoking your fish, in this case your Alaskan Salmon is a great idea but also requires a little planning. It's both fun and healthy and can be a great dinner for the family. Follow these easy steps and enjoy it today!

Step 1: Soaking your wood chips in water for 45 minutes to 1 hour prior to wrapping them in foil and putting them on the fire. This will keep them from burning faster while smoking longer.


Step 2: I like to season my salmon with sea salt and cracked pepper with the pink side up. Drizzle with Olive Oil as well for extra flavor.


Step 3: Once you get the fire going good, go ahead and put your wood chips on the fire so that they can begin the smoking process. Add the salmon face down with the skin side up. I also like to spray the rack so that the fish will not stick during the cooking process. Smoke for 2 1/2 hours or until completely cooked.


Step 4: Enjoy every bite
